What you need
8 thick slices baguette, ciabatta or similar
Garlic olive oil spray
125g PHILADELPHIA Spreadable Light Cream Cheese
12 cherry tomatoes, halved
½ small red onion, very finely sliced
1 tablespoon balsamic vinegar
1 tablespoon olive oil
½ teaspoon brown sugar
Salt and pepper, to taste
Torn basil leaves, for garnish
How to make it
SPRAY both sides of the baguette slices with oil and toast under a grill or chargrill until golden. Cool.
SPREAD the PHILLY over each slice of toast, top with tomato and onion.
WHISK together the vinegar, oil, sugar and seasonings, then drizzle over the tomatoes. Garnish with basil. Serve immediately.
Variation:
Use toasted Turkish bread or pita bread as an alternative to baguette or ciabatta.
Roasted or chargrilled vegetables may be used in place of the tomato and onion if preferred.
