Tomato & Balsamic Bruschetta

What you need

  • 8 thick slices baguette, ciabatta or similar
  • Garlic olive oil spray
  • 125g PHILADELPHIA Spreadable Light Cream Cheese
  • 12 cherry tomatoes, halved
  • ½ small red onion, very finely sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon brown sugar
  • Salt and pepper, to taste
  • Torn basil leaves, for garnish

How to make it

  • SPRAY both sides of the baguette slices with oil and toast under a grill or chargrill until golden. Cool.
  • SPREAD the PHILLY over each slice of toast, top with tomato and onion.
  • WHISK together the vinegar, oil, sugar and seasonings, then drizzle over the tomatoes. Garnish with basil. Serve immediately.
  • Use toasted Turkish bread or pita bread as an alternative to baguette or ciabatta. 
  • Roasted or chargrilled vegetables may be used in place of the tomato and onion if preferred.
