What you need

  • 1 vanilla bean or 2 teaspoons vanilla extract
  • 1/4 cup caster sugar
  • 1/4 cup vodka
  • 500g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup caster sugar, extra
  • 3 teaspoons gelatine, dissolved in 1/4 cup boiling water
  • 1 1/2 cups cream, lightly whipped

How to make it

  • SPLIT the vanilla bean lengthwise and scrape out seeds with a knife. Combine the vanilla seeds, bean, sugar and vodka in a small saucepan. Stir over low heat until the sugar is dissolved. Bring the mixture to the boil, and simmer 1 minute. Cool, then discard the vanilla bean.
  • BEAT the PHILADELPHIA and extra sugar in a large bowl with electric mixer until smooth. Add the vodka syrup and gelatine mixture, and mix well. Gently fold in the whipped cream until combined.
  • POUR the mixture into a lined 20cm springform pan. Refrigerate for 2-3 hours or until set.
